Chicken, Rice and Beans Casserole


This was my first time making this dish and I found quite surprising.  90 minutes and no peeking!?!  I will definitely be making this again - 3 minutes prep at 4pm, and dinner is on the table by 5:30pm?  YES PLEASE!

Next time though, I think I would add some vegetables - Peppers, Onions and Mushrooms maybe....
Serves 4

3 cups Chicken Broth
4 tsp Taco Seasoning
1 tsp Salt
1 tsp Garlic Powder
1 cup Rice, dry
2 cups Kidney Beans, Soaked if using dry
4 Chicken Breasts
1 cup Salsa

1.  Whisk together Broth, Taco Seasoning, Salt, and Garlic Powder.  Set aside.



2.  Add Rice and Beans to a 9x13 casserole dish.  Pour the Broth over the Rice and Beans and mix to distribute.



3.  Place the Chicken Breast on top of the Rice and Beans, and top with Salsa.



4.  Cover tightly with foil and let bake at 350' for 90 minutes.  No Peeking!



Serve hot with Sour Cream and additional Salsa.



For a side dish or meatless version, skip the Chicken and stir the salsa into the Broth.
